Rainforest Christmas Special Dishes Recipes

Curried turkey in potato shell:

    

Ingredients:

150 GM turkey

2 medium sized potatoes

75 GM Philadelphia cream cheese

1 tsp curry powder

1 pinch sweet paprika powder

50 GM onions chopped

10 GM garlic chopped

10 GM celery chopped 

20 GM mozzarella cheese

1/4 cup freshly chopped spinach leaves

Salt to taste

Butter 10 GM

1/4 tsp freshly crushed black peppercorns

15 GMs chopped cilantro leaves

2 tbsp sour cream

Oil for frying potato shells

Method:

Wash potatoes properly and then cut it into 2 pieces. 

Now scoop out the centre part with the help of a vegetable scooper and fry it in a hot oil. Drain and keep aside

Now heat butter in a Pan, add chopped onion, garlic, celery to it and sauté for few minutes.

Then add chopped boneless turkey meat and cook till well done. Adjust seasoning and remove from the flame.

When the turkey mixture is cooled add curry powder, chopped spinach leaves, cilantro leaves and mix well.

Stuff this prepared mixture in the prepared potato shells and top it up with mozzarella cheese and bake in a hot oven at 220 C for 10- 15 mins till the top is nice golden in colour. 

Serve hot, topped with sour cream sprinkled with sweet paprika powder.

Turkey, Cranberry and Parmesan pie:

Ingredients:

150 GM minced turkey meat

1 tbsp dried cranberries

50 GM Parmesan cheese,

Salt to taste

Crushed black peppercorn

5 gm Garlic powder

25 GM carrots

25 GM chopped bell peppers

25 GM Onion 

15 GM leeks

100 GM puff pastry sheet

1 egg lightly beaten

50 GM cheddar cheese

1 tsp celery salt

15 GM Butter 

Method:

 in a Pan heat butter. Then add onion, leeks, and cook till soft. 

then add carrots , bell peppers and turkey and cook till well done. Now add cranberries, Parmesan cheese celery salt, garlic powder and adjust seasoning.

Remove from flame and add cheddar cheese and lightly beaten egg. Keep aside

Now roll the puff pastry sheet and add the prepared stuffing in the centre, and bake in the oven at 180 C for 20 mins till the top is nice golden in colour.

Serve hot with cranberry sauce.
